Rise and shine, it’s breakfast time!
Breakfast is my favourite meal of the day. But I am child free and work from home, so I am guaranteed peace every single day. Well, unless someone calls me on Teams. I think we’ll all agree the Teams call tune is the theme tune to hell.
Anyhow, breakfast! Since getting a gastric sleeve the amount of food I can throw down has decreased significantly. Trying to get all the nutrients and associated gubbins into me on a limited food-budget can be difficult. Especially on the days where all I want is Pringles.
In my humble opinion, starting your day off right with a delicious breakfast is crucial for both physical and mental well-being. Not only does it provide a boost of energy and help to jumpstart your metabolism, but it also sets the tone for a productive day. Whether you're a fan of sweet treats like pancakes or waffles, or savoury options like eggs and bacon, there's a breakfast option out there for everyone.
I have hinted in my previous blog posts about my aversion to effort, and with breakfast is it no different. Granted on weekends i’ll treat myself to a boujee number involving 290384 ingredients and a heap of effort, but for weekdays anything that involves the slightest hint of effort is just too much of a ball-ache for me. I like things I can throw together the night before and wake up to a tasty delight of a morn.
Below I have listed some of my fave easy overnight breakfasts, I hope something tickles your fancy!
Slow Cooker Porridge - if porridge is your jam then this is the bomb. This is enough for 2-4 people depending on your level of greed. Just before bedtime, into a slow cooker throw in 200g oats, 2 peeled and chopped apples, handful of chopped walnuts, 3 heaped tablespoons of brown sugar, big handful of raisins, half a teaspoon of cinnamon, big pinch of salt and a litre of milk! Mix it all up and put it on low. In the morning you’ll have a thick, cosy, delicious porridge for diving right into.
Slow Cooker Breakfast Sausage Casserole - This is enough for 4 servings. Just before bedtime, in a frying pan over medium heat brown 8 sausages, until heated through, it’ll take 8ish minutes. While they’re doing their thing peel and chop 4 big potatoes, 2 big carrots, couple of cloves of garlic and a big onion and throw them into the slow cooker. Add in a chopped pepper, couple of handfuls of frozen peas and frozen sweetcorn, any veggies you fancy really! Add 2 tablespoons of olive oil, half a teaspoon dried dill, tablespoon of dried parsley, pig pinch of salt and pepper and as much chilli flakes as you like. Stir it all together so everything’s coated in oil and seasoning. Arrange sausages on top of vegetable mixture. Stick on low, and in about 8 hours the veggies will be tender, the sausages will be cooked and you’re ready to roll. If i’m feeling extra i’ll transfer everythin to a serving platter and sprinkle with feta cheese. Also a fan of topping with a fried egg and (because i’m a wrong ‘un) maple syrup.
Chorizo Breakfast Hash - This is my favourite, and takes about 5 minuted to organise. Get a whole bag of frozen hash browns and leave them out while you do your other bits, they don’t need to thaw but you’ll need to smash them up a bit so it’s good for them not to be rock solid. Slice half a chorizo ringing fry off in a pan for a couple of minutes, letting some of the oil release. Throw in a big onion you’ve thinly sliced, a pepper, any veggies you fancy really! After 5 minutes you’ll have a chorizo-y veggie medley. Now take your bag of hash brown and use the pointy end of a wooden spoon to stab at the bag and break them up a bit! You can miss this bit out, but I like to use it to get out some of the stifled rage. Get a bag of grated cheese out and you’re ready to build! Spray the bottom of the slow cooker with oil and flatten out about a third of the broken hash browns, cover with a third of the chorizo and veggies then cover that with a decent layer of cheese (dealer’s choice really!). Repeat that 3 times until you’ve used up all your stuff! Put on low and leave overnight. you can crack eggs in there but they go a bit dry if left for more than about 4 hours on low, so I would fry/poach and add ‘em in at when i’m serving but each to their own liiiike!
